Mandee is off out in the world avoiding Atlanta spring break week at the beach while Katie is stuck at home, and she is not bitter at all.  Join us to find out why Mandee is now obsessed with milkshakes and why Katie is lobbying to be best friends with Sanders.  We go over our Easter menus and talk all things Caitlin Clark.  Will we see her in Paris?  We sure do hope so.  And Katie is channeling her inner Mary Pinson and arranging flowers again.

 

Katie’s Food:

Squash Casserole - with a twist

6-8 squash, sliced

1 egg, slightly beaten

½ stick of butter, sliced

½ c mayo

1 Tbsp sugar

1-1 ½ cup cracker crumbs (I use 3 of the Fresh Stacks)

1 c grated cheese

Salt and pepper to taste

Topping:

1 Ritz Fresh Stack

Enough cheese to make your heart happy

 

Cook squash until tender.  Put egg, butter, mayo, sugar, cheese, salt, pepper, and cracker crumbs in a large bowl and mix.  Add well-drained, hot squash and mix.  Put in a greased 1 ½ qt casserole.  Add topping.  Bake at 350 for 20 minutes.

 

The twist - I add whatever goat cheese I have in the fridge and a squirt of sriracha.
