Find Your People Episode 34

It has been a wild and crazy week for Mandee and Katie.  There has been stomping and 2:30 am pruning in a bathrobe and pitchforks being hurled around.  Chaos has been the rule and not the exception these days and it has made for some great podcast fodder.  This week we also get let down by Auburn and MLB shenanigans and encouraged by Vandy.  

Mandee’s Food:

Dad’s Pimento Cheese -

1lb Hoop cheddar, shredded

Enough Mayo - start with a cup and go where you feel lead

Diced, jarred pimentos 

Shrimp Sea Island (Miss Gladys McKinnon)

5lbs shrimp, boiled and deveined

10 mild white onions, sliced into thin rings

Dressing - 

1 pt olive oil

¾ pt good cider vinegar

1 large bottle capers

Season to taste with salt, sugar, tabasco, and Worcestershire 

Into deep, flat pan, place a layer of shrimp, then a layer of onions, alternating until ingredients are consumed (?).

Mix dressing ingredients thoroughly and pour over shrimp.  Cover and place in ice box (or a fridge since it’s no longer 1943) 12 hours before serving, stirring at intervals.

To serve, lift out of dressing.  Place on a large platter and decorate with crisp lettuce leaves or parsley.  Serve with toothpicks.

Brown Rice

1 c. rice

2 cans beef consommé

1 stick butter

1 small can of mushrooms

Preheat oven to 350 - melt stick of butter in a 9x13 pan as the oven preheats; then add rice and soups, and mushrooms cover with foil and bake for 45 minutes to an hour.  Don’t burn yourself when you take off the foil.

Dixie’s Mama’s Pimento Cheese

1 container of regular Palmetto Cheese

1 container of spicy Palmetto Cheese

I container of pepper jack cheese spread from Publix Deli.

Combine and enjoy.
