Katie Food:
What to take to a potluck that you won’t see 5 of on the table.
Spinach and Artichoke Casserole
3 10 oz packages frozen chopped spinach
14 oz can chopped artichoke hearts, drained
1 small onion minced
1 stick butter, melted
1/c c sour cream
2 packages cream cheese, softened
Parmesan cheese
1 tsp lemon juice
Garlic powder
Topping:
1 ½ c Ritz cracker crumbs
Melted butter
Parmesan cheese
Cook and drain spinach. Preheat oven to 350. Line bottom of greased 9x13 baking dish with artichoke hearts. Sauté onions in butter. Add rest of casserole ingredients. Spread over artichoke hearts. Toss crumbs in melted butter and add parmesan cheese. Sprinkle over casserole. Bake uncovered for 20 min or until bubbly.
