Find Your People Episode 65

What would Jimmy Carter do? We ask that very question and get a great answer in Episode 65. Here’s a hint, it includes finding your people. We get all of the sports updates from Katie and Mandee as well as some great recipes and favorites. The best news is that Mandee has Netflix again and is bringing us some great watching ideas.

Katie’s Food

Two recipes from the new Caro Chambers Cookbook

Lemony Herby Turkey Patties (p. 78)

½ c fresh parsley

1 lb ground turkey

½ c panko breadcrumbs

½ c parmesan

1 large egg

2 tbs sour cream (I used greek yogurt)

1 tsp salt

Black pepper

2 garlic cloves

1 lemon zest

2 tbsp extra virgin olive oil

Add all ingredients together except for olive oil.  Make into patties.  Add olive oil to a skillet over medium high heat.  Cook patties 4-5 minutes per side.

Frico Broccoli (p. 144)

1 lb broccoli

4 tbsp (½ stick) butter, melted

½ c parmesan cheese

¾ c panko breadcrumbs

½ tsp garlic powder

Salt

I squeezed the lemon that I had from the turkey patties in there as well.

Melt butter and add rest of ingredients.  Toss broccoli on a sheet pan with the mixture and top with more parm if you want to.  Roast at 425 for 12 minutes. 

Sauce - I felt like the patties needed a sauce so I made one with mayo, greek yogurt, dijon mustard, lemon juice and some seasonings.
