The world may seem like it is falling apart all around us, but Episode 60 will make you laugh and give you hope in the midst of any storm. Mandee’s Food
Caro Chambers - Peanutty Pork and Brussels
1lb ground pork
1lb shaved brussels
1 tbsp sesame oil
1c chopped cilantro
4 cloves garlic
¼ c soy sauce
2 tbsp rice vinegar
2 tbsp creamy peanut butter
1-2 tbsp sriracha
Toasted sesame seeds
Brown pork in sesame oil, add brussels and cook until soft. Use microplane to grate garlic and add finely chopped cilantro. Scooch everything over to the side then add soy sauce, rice vinegar, peanut butter, and sriracha. Stir until mostly smooth sauce forms before stirring everything together. Garnish with sesame seeds and serve over rice or couscous cups or quinoa or whatever floats your boat.
